MANGO & ACAI FAMILY BREAKFAST BOWL

Star of the Show Ingredients:

Mango is a rich source of vitamin C, Vitamin A, fibre Blueberries and Acai together are 2 of fruits highest in anti-oxidants. Both contain good amounts of fibre while blueberries are particularly rich in Vitamin C and K and Acai in Vitamin A, K and calcium. Acai is also high in protein which promotes repair and satiety and healthy mono-unsaturated fats. Chia seeds are full of plant based omega-3 fatty acids and fibre.

 

Ingredients:

1 large Australian mango or 2 Thai mangoes. I cup blueberries (can use frozen) 2 teaspoons Acai powder 3 tablespoons protein powder 2 tablespoons chia seeds Juice of 1 lemon Splash of vanilla essence

 

Method:

Place all the ingredients in a high speed blender and mix until smooth. Put in a jar and leave in the fridge to set (minimum of 1 hour but ideally prepare the night before and leave overnight) Serve in the morning with sprinkling of granola / muesli or yogurt (coconut for dairy free).
