Star of the Show Ingredients

Sunflower Seeds are rich in many micronutrients such as vitamin E and selenium which are important anti-oxidants in the body. Seeds are also a great source of healthy fats which keep our blood sugars balanced and feeling fuller for longer

Chicken is great source of protein and vitamins B3 and B6. Vitamin B6 is important for immune system, metabolism and central nervous system functioning while B3 is responsible for converting carbohydrates from the food that we eat into energy. It also maintains the health of our body’s cells. Vitamin B3 has also been shown to have cholesterol-lowering effects which potentially could have a beneficial cardio protective role.

Ingredients (serves 4 as a main meal). The recipe easily halved if making for packed lunches

1 ½ cups of sunflower seeds

4 chicken breasts

1 egg, beaten

1 dessertspoon smoked paprika

1 teaspoon garlic powder

Salt & Pepper



Preheat oven to 180C

Line a baking sheet with parchment paper

Flatten chicken breasts with a rolling pin. If making them into nuggets, cut into strips and set aside

Grind sunflower seeds until they resemble breadcrumbs, add the smoked paprika, garlic powder and salt and pepper. Mix well and pour into a dish

Take each strip/breast and dip into egg mixture then roll in the seed mix and place on baking tray

Repeat until all chicken strips/breast have been coated.

Bake in the oven for 18-20 minutes until cooked

Serve with salad or a home-made coleslaw
