Star of the Show:

Coconut is packed full of fibre. In fact a whopping 18% (based on 1oz/28gm serving) of your recommended daily intake of fibre!


Ingredients (makes about 20 balls)


150gm non sweetened dessicated coconut

75gm coconut oil

3 tbsp maple syrup/rice malt syrup

1/2 tsp vanilla essence


For the chocolate:

1/2 cup coconut oil

1/4 cup cacao powder

2 tbsp maple syrup/rice malt syrup



Place 1/2 the desiccated coconut in a blender and blitz until fine

Add the rest of the ingredients and pulse until a sticky consistency.

Roll out balls (size of a walnut) onto a lined baking tray

Refrigerate for one hour until firm


To make the dipping chocolate, put all the ingredients into a small pan over a low heat and melt together. 

Take the walnut sized balls out of the fridge and dip in the chocolate sauce. 

Return to the tray and chill for 30 mins.
