Salmon Nicoise Salad

Star of the Show Ingredients:

Aside from being a wonderful source of protein, salmon is possibly the best source of anti-inflammatory Omega 3 fatty acids. One portion of salmon alone contains your daily intake of Vitamin D which is crucial in modulating our immune system.

 

Serves 4

Ingredients:

  • 4 eggs

  • 125g fine green beans, trimmed and halved

  • 2 little gem lettuces

  • 1 red onion, thinly sliced

  • 225g cherry tomatoes, halved

  • 4 tbsp. black olives

  • 4 x 125g salmon fillets

  • 1 lemon, sliced into wedges

Dressing
  • 3 tbsp. extra virgin olive oil

  • 1 tbsp. lemon juice

  • ½ tsp Dijon mustard

  • 1 small clove of garlic, crushed

Method:

  1. Place the eggs in a saucepan of cold water. Bring to the boil and cook for 5 minutes. Drain and plunge into cold water, then peel.

  2. Steam or boil the green beans for 2 minutes. Drain.

  3. Tear the lettuce into bite sized pieces and place in a bowl with the onions, tomatoes, olives and green beans.

  4. Heat the grill. Drizzle the salmon with a little lemon juice and grill until cooked through.

  5. Mix the dressing ingredients together Toss the salad with the dressing. Divide into 4 bowls. Place a salmon fillet on top of each. Slice the eggs into quarters and arrange next to the salmon with the lemon wedges.
