Star of the Show Ingredients:
Kelp Noodles are traditional to Asian and Korean cuisine. This light and springy sea vegetable is packed full of vitamins A, B and C as well as magnesium, calcium and zinc. Find them in the speciality aisle in the supermarket or health food shop or in any Asian supermarket.
Sesame seeds are packed full of magnesium, copper, calcium and manganese. They are also a good source of protein and fibre too.
Ingredients (Serves 2)
For the Salad:
1 carrot, spiralled or julienned
1 Zucchini spiralled
1/2 red pepper, finely sliced
1/2 yellow pepper, finely sliced
Large handful of washed spinach leaves, shredded
Large handful of kelp noodles, rinsed and drained. If you can't find kelp noodles then rice or buckwheat noodles make a good alternative
2 tablespoons of sesame seeds, dry toasted
Handful of fresh coriander leaves, chopped
For the dressing:
2tbsp of any nut butter. Peanut or almond work well.
2 tsp lime juice
1tbsp tamari or soy sauce
pinch of chilli flakes as per taste
1tsp maple syrup or honey (optional)
1tsp sesame oil
A little water to mix
Chop all the salad ingredients and place into a large bowl. If you do not have a spriraliser then a potato peeler works just as well. Add the kelp noodles and mix well
Mix all the dressing ingredients together. If the mixture is a little firm then add a splash of water to thin it out.
Pour on the dressing and mix well.
Serve with a protein of your choice. Chicken, prawn or tofu work well and Enjoy
