Star of the Show Ingredients:
Sesame Seeds are rich source of fibre and packed full of vitamins and minerals calcium, iron and copper and unique organic compounds, such as sesamolin, as well as minerals like copper, calcium. Do not underestimate them. They may be small, but they pack a major health punch!
Serves 2 -3
200gm of soba noodles or whole wheat spaghetti
1/2 block of firm tofu, sliced and drained (you can use any other protein source if preferred)
1 cup of edamame beans, shelled
2 carrots, thinly sliced (you can use a ribbon peeler of spiraliser)
1 cup of snow peas thinly sliced
1 bunch of spring onions, finely sliced
Handful of fresh coriander, chopped
2 tbsp sesame seeds (black or white), toasted
For the Dressing: ¼ cup tamari, 2 tbsp extra virgin olive oil, 1 tbsp of sesame oil, juice of 1 lime, 1tbsp miso paste, 2cm peeled chopped ginger, 1 tsp honey/maple syrup, 2 padi chilli finely chopped (optional).
1.Place all the vegetables into a bowl and set to one side.
2.Chop tofu into small chunks and lightly fry until golden
3.Mix all the dressing ingredients together.
4.Combine, serve and eat right away
