Buddha Bowl

Star of the Show Ingredients:

Leftovers! A Buddha Bowl is a really simple and easy way to use up all your leftovers. A nourishing meal that is just small bites of everything. Anything goes. Try and include as many different colours as possible and always include a portion of protein and some healthy fats to keep your blood sugar levels balanced

 

Serves 2

Ingredients:

  • 1 avocado

  • chicken breast shedded (you can use any other protein source if preferred)

  • 1 cup of edamame beans, shelled

  • 1 yellow pepper, finely sliced

  • 1/2 red cabbage, finely sliced

  • 1 bunch of spring onions, finely sliced

  • 8 cherry tomatoes

  • Small handful of mixed nuts and seeds

  • Handful of fresh coriander, chopped

For the Dressing: ¼ cup tamari, 2 tbsp extra virgin olive oil, 1 tbsp of sesame oil, juice of 1 lime, 1tbsp miso paste, 2cm peeled chopped ginger, 1 tsp honey/maple syrup, 2 padi chilli finely chopped (optional).

 

Method:

1.Place all the vegetables into a bowl and set to one side.

2.Shred cooked chicken breast

3.Divide the the chicken and vegetables into 2 bowls

4. Mix all the dressing ingredients together.

4.Pour dressing over the bowls and scatter with coriander and a few mixed nuts/seeds.
