Collagen Almond Butter Energy Balls

Star of the Show : Collagen

 

The most abundant protein in our body, collagen is the glue that holds our tissues together including our bones, muscles, cartilage, tendons, and digestive system. Not only is it fabulous for skin helping it look smoother and firmer, but it is crucial in gut healing and reduces joint pain. 

 

INGREDIENTS ( Makes 18 balls): 

1 cup rolled oats (GF if needed)

1/2 cup dark chocolate chips (65% cacao or above)

1/2 cup nut butter (we like almond but peanut butter or a seed butter would work too)

4 tbsp ground flax seed

2 tbsp Collagen Powder (we like Great Lakes Collagen Hydrolysate available on iHerb)

2 tbsp raw honey

1/2 tbsp coconut oil (melted)

 

 

METHOD:

1. Put all the ingredients in a bowl and mix until fully combined.  Alternatively you could do this in a food processor but only blend for a short period of time. Add a splash of water if you think mixture is too dry

2. Roll into tablespoon size balls and refrigerate or keep in the freezer 

3. Make these lunchbox friendly by swopping the nut butter for a seed butter
