Star of the Show Ingredients: Barramundi
You may be surprised to hear that while not containing levels equal to salmon, barramundi is a good source of Omega 3.
4 Barramundi fillets
2 tablespoons raw honey
1 tsp balsamic vinegar
2 tablespoons tamari
1 tablespoon orange zest
1 tablespoon orange juice
1inch minced ginger
2 tablespoons oil ( olive, coconut or avocado)
Salt and peper
1. Pre-heat oven to 180C
2. Season barramundi with salt and pepper and place in an oven proof dish.
3. Combine honey, balsamic vinegar, tamari, orange juice and zest, ginger and oil in a bowl, mix thoroughly and pour this over the fish.
4. Roast in oven for 20-25 minutes until the fish is cooked through.
5. Garnish with mint leaves and serve with quinoa if desired and a green salad or steamed vegetables
