Star of the Show : Açaí
Açaí berries are a good source of calcium, fibre and vitamin A but they are best known for their high antioxidant content. In fact Acai berries contain 10 to 30 times more anthocyanin power than red wine! Add to this the berries and beetroot and this bowl is an antioxidant powerhouse!
INGREDIENTS: (Serves 2)
12x100 g packs of frozen acai
50g cooked beetroot, chopped
1 cup frozen berries
11og full fat coconut milk
120 ml coconut water
Zest and juice of a lime
Toppings: any of the following that take your fancy - coconut flakes, cacao nibs, kiwi, pomegranate seeds, TNT homemade granola.
1. Break the açaí up a bit (we use a rolling pin to bash it ) while still in its packaging.
2. Place all the ingredients in a high speed blender and blend until smooth. If need be you add some more liquid in small increments to reach the consistency you like.
3. Pour into bowls and serve immediately with toppings of your choice
