Spinach, Pear & Walnut Salad with Blue Cheese

Star of the Show:  Walnuts

Walnuts aka "mini brains" are a great source of plant based Omega3 which plays a part in helping to improve brain signalling and neurogenesis. The vitamin E in walnuts may also contribute to neuroprotection and memory function.

 

Ingredients (Serves 2)

  • 4 large handfuls of spinach or any green/mixed leaves

  • 1 pear, thinly sliced

  • Handful of walnuts, broken into small pieces

  • Handful of grapes

  • 100gms blue cheese/Stilton 

  • 2tbsp olive oil

  • 1sp apple cider vinegar

  • salt & pepper to taste

 

Method

1. Divide all the ingredients into two bowls
2. Mix the olive oil, apple cider vinegar  and drizzle over the leaves. Season with salt and pepper to taste
