Star of the Show: Tofu
Tofu is a great source of protein for vegetarians and vegans as it contains all the essential amino acids that we need for growth and development. It is also a really valuable plant source of calcium and iron.
INGREDIENTS (Serves 2)
200gm firm tofu
1 pepper (any colour)
2 spring onions, finely chopped
5 radishes, finely sliced
1 chilli, finely chopped
1 carrot, shredded
1 zucchini, peeled or spiralised
1 tbsp toasted sesame seeds
For the Dressing:
1 tbsp sweet miso paste
Juice and zest of 1 lime
1. Drain excess moisture from the tofu. I use kitchen paper towels to do this as you need the tofu to be as dry as possible. Slice and then cut in half into chunks.
2. In a frying pan, add a good glut of olive oil and lightly fry the tofu on each side for approximately 3-5 minutes until golden.
2. Assemble all the salad ingredients and make the dressing.
3. Add the tofu to the salad and toss well to coat evenly.
TNT Top tip: For a more substantial salad you could add some buckwheat or rice noodles.
