Red Cabbage, Carrot & Multi Seed Salad

Star of the Show:  Red Cabbage

 

Red cabbage is a much overlooked partner to the white variety. Red or white the humble cabbage is one of the most nutrient dense veggies out there. Packed full of vitamin C and A, fibre, and anti oxidants especially anthocyanins and indoles which are known for their heart healthy and liver loving properties. 

 

 

Ingredients: (Serves 2 as a main and 4 as a side )

  • 1/2 head red cabbage, sliced

  • 2 carrots, grated

  • 150gms Chinese leaves, shredded

  • 1/2 red onion, finely sliced

  • 1 handful mint leaves, shredded

  • 1 handful of flat leaf parsley, shredded

  • 1tbsp pine nuts, toasted

  • 1tbsp sunflower seeds, toasted

  • 1tbsp pumpkin seeds, toasted

 

For the dressing:

  • Juice of 2 limes

  • Zest of 1 lime

  • 1tbsp sesame oil

  • 1tbsp Extra Virgin Olive Oil

  • 1tsp maple syrup

Method

1. Assemble salad ingredients into a bowl

2. Lightly fry the pine nuts, sunflower and pumpkin seeds for 2-3 minutes until slightly browned

3. Add to the salad with the dressing and mix well

 

This makes a great one meal salad with some halloumi or feta or grilled chicken or salmon.
